I’ve been cooking for myself lately, I’ve been eating out so much in September that I thought that’s alot of money wasted away! So doing batch cooking and taking leftovers for lunch is the cheapest way!
I’ve been cooking noodles, the first one is from Exploring China a recipe book by Ken Hom and Ching-He Huang. It was a minced pork and tomato noodle soup. It tasted amazing, just enough spice and the broth tasted lush. I would definitely cook it again. With the fried minced pork it didn’t make the soup greasy but it wasn’t a thin soup either. It was just right!
The second noodle dish I cooked was from Ching-He Huang called Eat Clean. This recipe book like it says on the tin… Clean eating! Lots of healthy recipes in this book and I cooked an aubergine and tomato soba noodles. This wasn’t in soup, it had a little bit of sauce from the tamari and a bit of noodle water. The tomatoes made it more fresh and the aubergines still had a bit of bite to it. I ate this cold for lunch and it was still nice!
I’m going to try and cook more recipes from the below books as I love my noodles and Chinese food so much!
