I love my congee and where there’s an easier way to cook it, then I’m there! I looked online this week and you can cook congee in a slow cooker. So I thought I would try it out.
Not much to it, you put everything in the slow cooker and just turn it on. It asked for 8 cups of water but I only put about 4 or 5, this way you can add a little more water if you want near the end.
It said to put it on high for 5 hours but it was actually quicker than that as I like my congee a little bit thick. I started the slow cooker around half 1 in the afternoon and by the time I finished work at 4… It was ready!
Before the congee was cooked, I gave it a stir just to make sure the rice is breaking down and then I just let it do its thing.
The consistency was perfect and I put only a little bit more water at the end. It was nice and silky and the chicken was still a good texture.
I recommend cooking congee in the slow cooker. My congee had slices of ginger, a cup of long grain rice and chicken thighs; which I cut up into cubes.
