No going out

So I’m sure everyone is affected by the coronavirus and since Boris Johnson announced the lock down in UK, restaurants/bars etc were forced to close.

Since my last restaurant outting, I have been trying to figure what to now put on my blog! So I’ve decided that whatever I have been making at home, I will share with you guys. I might have to look at my past food adventures and add them on here too!

First up then, is my chicken, tomato and sweetcorn soup. I didn’t have much in my pantry so I had to use what I got at home. Unfortunately, I didn’t have any onions but I got round that.

The ingredients for the soup was: fresh tomatoes, corn on the Cob, chicken wings, garlic and tomato puree. You can put any noodles you want in this, I opted for udon noodles.

I fried off the tomatoes (I chopped these into quarter) and once they have softened, I then put in the chicken wings to get a bit of colour on them. Once the chicken has colour add in 3 cloves of crushed garlic.

Once that’s all cooked off, pour in boiling water; this is to your liking, depends how much soup you want and how many vegetables you put in. Put on the lid and let that boil.

As the chicken should be cooked now, put in the corn on the Cob (I had big corn so I chopped them into 3). It shouldn’t take long to cook the corn. Once the corn is cooked, add the tomato puree; this is also depending on your taste. The puree is for colour and a bit sweet taste.

Then that’s your soup! I don’t add salt to this as the vegetables add the sweetness to the soup already, so it’s to your taste really if you want to add salt. Plus, too much salt isn’t good for you!

Oriental people tend to like their soups watery and chunky. I don’t really eat alot of puree’d soups as I like a bit of bite to my soups. This is my comfort food so I hope you enjoy this recipe 🙂
