Frittata di Zucchine

Last night’s dinner was Frittata di zucchine; which is zucchini/courgette frittata. If you read my previous blog, this recipe is also from the same cook book. Gino’s Italian Escape.

This is how I made it. Just FYI there should be onions in this… But I didn’t have any onions, but it was still nice.

Slice your red and yellow peppers into strips and your courgettes into slices.
Put oil in the pan and fry off your peppers first. Once they have softened add in your courgettes until they are brown. Whilst you are waiting, in a separate bowl crack in 6 eggs and season with pepper.
Once your vegetables are nicely browned, pour in your egg mixture
Move the eggs around with a spatula until the eggs are set on the bottom. Sprinkle parmesan on top
You now need to flip the frittata! I used a plate bigger than my pan to flip the frittata. Put your plate on top of the pan and then flip the frittata and then slide it back into the pan to cook the other side.
Buon apettito! I sprinkled more parmesan on top as I still had some left over. Enjoy šŸ™‚
