Agnello alla Pastora

This is another dish from Culinaria Italy but this dish is from Basilicata. It is basically a lamb and potatoes dish; which is also a one pot dish! (there’s a theme going on here). In case you missed what cook book it’s from..

This is how this simple dish is made..

Put your lamb chops in a deep pan and coarsely chop your potatoes. Then put that in the pan with the lamb
Deseed your tomatoes and finely chop them and put them in a separate bowl. You can either finely slice or finely chop your onion and then add them to your tomatoes. Put in olive oil, parsley, rosemary and garlic and mix
Add the tomato mix on top of your lamb, season with salt and pepper and grate parmesan cheese on top. Cover your pan with foil and set oven to 170 degrees and leave it to cook for 2 hours.
Buon apettito, melt in your mouth lamb with potatoes

I love how Italian cooking is so simple with not alot of ingredients. You didn’t need any sauce with this as the olive oil mixture that’s in it makes a lovely sauce. Why don’t you give it a try.
