This is another recipe from Culinaria Italy. It says it’s vegetable soup with pasta but there is sausage in there, so definitely not vegetarian friendly lol. This recipe is in the region of Marche 🙂
I do like my pasta in soup so this was a perfect recipe for me! Here’s how it’s made.
Peel and dice your carrots, white cabbage needs to be sliced and the sausages needs to be chopped up into chunks. Put butter in the pan and once melted add all 3 of those ingredients into the pan and saute until the vegetables and soft. I prefer big chunks of tomato so I cut my tomatoes chunkier than the recipe, but if you want to follow the recipe then you will need to dice your tomatoes. Once diced add to the pan and leave until the tomatoes are soft. Add 4 cups of beef stock and add the dry pasta. You then cook it all until the pasta is cooked. Sprinkle parmesan on top and buon apettito!
When I tasted this, it was like my ultimate comfort food. So warm and cosy!
