I’m not sure where I got this recipe from… But it’s a bloody good recipe! Read how I made it..
Ingredients are: chicken thighs (I used about 4 from that pack), Chorizo, 1 onion, 1 red pepper, 2 garlic cloves, 1 tablespoon cajun seasoning, 250g long grain rice, 400g canned plum tomatoes and 350ml chicken stockDice your onion, slice your red pepper and mince your garlicHeat oil and brown your chicken. Once browned take it out of the pan. Next, cook the onions until softened then add the red pepper, garlic, Chorizo and cajun seasoning. Cook all of this for about 5 minutes. After about 5 minutes, put the chicken back in the pan along with the rice, tomatoes and the chicken stock. Give it a stir and cover. Simmer for about 20-25 minutes or until the rice is tender. Ta da… Jambalaya!
If I’m honest, I could have put more cajun seasoning in it but you can still taste it. I didn’t need to add any salt or pepper in it as it had alot of flavour already. Why don’t you give this recipe a try… It’ll be worth it!
