Now this type of food I cooked is like marmite, you either love it or hate it. I LOVE it! It’s very versatile, you can eat it for breakfast, lunch or dinner. So what is it?! It’s…. Congee!

When I was younger my parents would cook congee and it’ll be like baby food for me. I don’t think I’ve ever had baby food :/ I never asked lol

Congee is made with rice and water and when it’s cooked down it becomes thick and like porridge… But savoury not sweet!

You can cook the congee either on the hob or if you have a rice cooker you can cook it in there. I was lazy so I cooked it in my rice cooker. You put it in and just leave it, you stir abit and once you have the consistency you want then it’s done!

I didn’t have any fresh ginger but I did have ginger powder, I thought that might work and it turns out it did! 😀 I cut up chicken thighs and seasoned with salt and left it for an hour or 2. When you are ready to cook your congee just put it straight in there. It’s all so easy!

This is my comfort food and its great when it’s winter as it warms you straight up. Ahh I miss my parents cooking 😦
