I haven’t been food shopping so ended up looking in the freezer to see what I had! I had frozen mash from last weekend, frozen vegetables and chicken thighs! With that, I looked in my store cupboard and see what I could rustle up! Here’s how I made the gochujang chicken.
Ingredients: 3 chicken thighs (defrosted/fresh), frozen vegetables, 1 tablespoon brown sugar, 1 tablespoon soy sauce, 1 tablespoon shaoxin wine, 1 tablespoon sesame oil, 3 garlic cloves (minced) and half cup of gochujang (Korean chilli paste).
Make your marinade: in a bowl (big enough to put your chicken in) put in the soy sauce, sesame oil, sugar, shaoxin wine, garlic and the gochujang and give it a whisk to combine. Once combined put in your chicken and make sure you chicken is coated in all the marinade and leave for 30 minutes.
Pre heat the oven at 200 degrees. After 30 minutes, put your chicken on a lined baking tray and put it in the oven. Make sure you keep the marinade aside! You’ll need it later.
After about 10 minutes, turn your chicken and put the marinade on the chicken and put the chicken back in the oven until cooked through.
You can make your mash from fresh but I had frozen so I put that in the microwave and the vegetables on the hob.
Once the chicken is cooked it’s time to serve!

Half cup of gochujang for the marinade gave it a great spice kick! If you’re not into your spice… You can taylor how much you put in.
If you have 6 chicken thighs you need to double the sugar and the garlic but everything stays the same.
This is a very quick dinner and one way to use up my frozen food haha.
