I don’t eat alot of roast because I don’t want to cook a whole chicken. I don’t eat the breast so it’ll be a whole lot of waste! So I decided to just roast chicken thighs instead. I love brown meat and eating off the bone (inner cave woman)
I think this recipe was Nigella Lawson’s but she used a whole chicken so I just changed it up with chicken thighs.
I thought I would need gravy with this but it was so saucy already with the meat juices and also from the vegetables! This meal didn’t have a lot of salt in it; which is a plus.

Nigella put the rosemary and lemon in the chicken cavity but as I didn’t have that, I put the lemon under the chicken with the vegetables and the the rosemary just tucked next to the thighs.
I loved the crispy rosemary leaves when it comes out the oven. Eating that with the chicken and the vegetables gives it all the texture.
I don’t like wasting food so this was the best way to have a roast for me!
