Hainanese chicken

This is the very first time making Hainanese chicken, well very first time poaching a whole chicken! This is a recipe by Marion’s Kitchen. Her recipe is in the video

I don’t eat alot of breast meat as I think it’s too dry but OH MY GOD, this chicken breast is sooooo juicy! When I cut into the breast meat so much juice was coming out and I couldn’t wait to tuck in. This is also the first time I actually cut chicken into legs and breast meat, so I’m quite proud of myself!

The chicken was poached perfectly, nice and soft. The chicken broth you drink it whilst eating the chicken and rice.

The dipping sauce was spring onions, ginger and salt bashed up (with a mortar and pestle) and then add in hot vegetable oil. The kitchen will smell amazing!

I actually ate half a chicken tonight because it tasted so good! I got half a chicken left and a little bit more rice so that’ll be dinner tomorrow. The broth can be frozen and used for another time, no waste!
