This was a great recipe and it makes alot of soup! For me it makes about 4 meals. The recipe didn’t have tofu but I added the tofu just before the cooking is due to finish.
The pork was very tender and melt in your mouth. I reckon the tofu is a good addon as it took on all the coconuty soup flavour.
The soup had a good spice level as it had red Thai paste in it and a nice subtle coconut flavour.
You don’t add the noodles into the slow cooker; you need to cook that separately, put it in a bowl and the ladle the soup in.
This is a good batch cooking recipe, I’ve put it in the freezer and the flavour after defrosting is still there. Why don’t you give it a try.
