No recipe for tonight, this is more comfort food than anything as I haven’t had my mum’s soup in a year 😦
My mum does amazing soups and seaweed and tofu soup is one of them.
This isn’t using the Japanese seaweed, this seaweed is especially for soups. It’s a dry seaweed and you have to soak it in cold water for a little bit before putting it in the broth.

I fried off half an onion, a tomato and 1 garlic clove. Then once they are softened pour in boiling water. When it is simmering add your tofu and let it boil. Then add your seaweed and season with salt and pepper. Lastly, pour in 2 whisked eggs and stir so the eggs don’t clump up in one place.
This doesn’t taste the same as my mum’s but it’s nearly there! I just wanted a comfort soup on this rainy day! Give it a try 🙂
