I hear the sound of crickets outside my window whilst the sun is streaming in through the curtains. I lay in bed thinking of what the day has in store for me. Getting out of bed and I head downstairs for some breakfast; this consists of a nice warm pineapple bun (菠蘿包).
I head out to catch the mini van into town, pulling my sleeves over my arms and hands so I don’t get my blood sucked by those pesky mosquitoes! The mini van arrives and it’s so good to have the air conditioning on my skin after standing in the sun.
Arriving into town and I instantly smell the freshly baked bread in the bakery, need to remember to go into the bakery before heading home. First, need to go for a spot of lunch!
I go to a cha chan teng (茶餐廳); this is a Hong Kong style cafe, you can eat anything from toast to noodles and I always go for noodles. So for lunch I opt for a braised beef brisket with white radish and vermicelli noodles.
**Dream over**
Ahh man, it would be so good to be in Hong Kong right now but I’m stuck in England and the damn lockdown! So for a trip down memory lane I did make my own braised beef brisket and white radish vermicelli dish.

Obviously mine isn’t as good as the ones in the cafe but this will have to do for now. It still had the taste I was going for, the beef was so tender and the fat really helped this. The white radish was soft and full of the spices from the sauce; star anise, cardamom, mandarine peel and cinnamon. It would be so much better with beef tendon aswell. Oh I am salivating so much whilst writing this!
