Feeling uninspired…

I felt uninspired tonight for dinner so I looked at what I had in the cupboards and looked on YouTube to see what simple recipes there were. I had a simple dashi broth with udon noodles and bok choi with a side of Japanese pickles. The recipe for the broth is below:

2 sachets of dashi powder, 2 cups of hot water, 1 teaspoon of sugar, 1 tablespoon of soy sauce and 1 tablespoon of mirin. Mirin is a rice wine that is commonly used in Japanese cuisine. You can actually make your own dashi broth by boiling kelp and bonito flakes; I bought the dashi powder from a local Chinese supermarket.

The broth tasted like it was something from a restaurant; you can taste the mirin and the sweetness of the sugar, it was so warming and comforting. I had a slurp of noodles and then a bite of the pickles and the bok choi, married so perfectly.

For dessert – I bought from Tesco. It was a fresh cream Belgian chocolate choux bun. I’m not a dessert person but I love myself a choux bun! It was filled to the brim with fresh cream and the Belgian chocolate wasn’t overly sweet. Thank god there are 2 in a pack; I left one tomorrow πŸ˜€

I ended the evening with strawberries; which were also from Tesco and discounted too so I bought 2!
