Mum’s cooking

I think I mentioned my mum, sister, niece and nephew are over from Hong Kong and Singapore. They only come back for 2/3 months a year… So when my parents are cooking dinner you can’t really say no!

So I skipped the gym to stay in with my mum whilst my sister was out. I called my mum to see what was for dinner and she said it was up to me. Now there was only 2 of us for dinner so I wanted to have something simple. So I said lets have noodles, my mum then asked me if I had any meat and my reply was… Ikea meatballs lol.

It was literally vegetables with meatballs with noodles and soup. To make it fragrant my mum fried off some tomatoes, onions and garlic; this was kind of the soup base. Once it was fried off it gave a lovely aroma!

Then mum put in the stock; this was hot water and chicken powder. She then let this bubble before putting in seaweed, cabbage and the meatballs.

Let the whole lot boil, then you can put whichever kind of noodles you want. We used dried noodles which my mum put in hot boiling water until it softens and then run it under the cold tap so they don’t stick together and you stop the cooking.

It was so nice to have dinner cooked by my mum because I hardly have her cooking until she comes over. If you want a simple dinner…. This is it! Why don’t you give it a try? You can make it your own by adding chilli etc to it. I did add a spritz of lemon and some chilli oil to mine.. Yummy!
